While there is nothing wrong with regular Rice Krispie treats, I often enjoy making more nutrient dense versions for myself. Why? Well, for most of my life, when it comes to sweets, I have the tendency to binge, so I find that sometimes making my own desserts with a higher protein ingredient or some kind of fiber or healthy fat makes them more satisfying, and I’m likely to just eat one or two of the treat instead of the entire tray/package…because believe me, I’ve done that before! If this is something you have also struggled with, but you still want dessert, recipes like this are for you! Nutrient Dense “Rice Krispies” Treat 👩🏻🍳2-3 tbsp. unsalted butter (I used @kerrygoldusa 👩🏻🍳3 cups mini marshmellows 👩🏻🍳4 cups of @threewishes marshmellow cereal 👩🏻🍳 1 cup @traderjoes candy coated almonds, crushed (seasonal and optional!) Melt butter on low heat. Add the marshmellows. Stir about a minute. They will melt pretty quick. Turn off the stove and add your cereal and 3/4 cups of the almonds. Stir and pour into a pre-greased 8x8 glass Tupperware. The candy coated almonds will melt a bit in the mixture so add the last 1/4th of the almonds once you’ve pour the mixture so you still get some of the fun colors (this is a great spring holiday party idea!) Let this cool in the refrigerator for 30 minutes. Remove, cut into pieces and enjoy! If you try this recipe, let me know!
